Of these many cultivars of chipilin, this is perhaps the most COLD-HARDY variety of chipilin. Its’ leaves are huge and more abundant than other varieties of chipilin.This is a new variety of Chipilin (Crotalaria longirostrata), never before offered! The Central-American Cold-Hardy Chipilin from El Salvador is one of the rarest varieties of chipilin! Seed supplies are limited. This variety is a cool weather type and takes cold weather better than all other strains of chipilin. The original seed was collected just a few years ago in the cooler Central American Highlands of El Salvador. We have found it to be cold-hardy down to 27 degrees here in South Texas. Central American Cold-Hardy El Salvador Chipilin is a perennial and can grow to over 4 meters (12 feet+) in height with a wide and bushy form, developing a 3-4 inch thick woody trunk, and producing for up to 6 years, if protected from sub-freezing temperatures. Central American Cold-Hardy El Salvador Chipilin can be grown in pots or in the garden. The plants grow slowly at first but then increase in production. They require very warm temperatures to grow best. It is ready to harvest at 60 days and is ready to cut again every 2-3 weeks throughout the growing season until frost. In the garden the plants should be spaced 12-36 inches apart. Since chipilin is a legume, it also improves soil by fixing nitrogen. It also suppresses nematodes and weeds and adds organic matter to the soil when the plant residues are incorporated into the soil or made into rich compost. Chipilin is very nutritious, being high in protein, iron, calcium, magnesium, beta carotene, and vitamin C. It is commonly used to make traditional in Central America and Southern Mexico. Some of the dishes include tamales de chipilin, soups, dumplings, stews, and other delicious chipilin dishes. It has a wonderful flavor that can be compared to a combination of watercress, spinach, and sorrel. It can also be eaten with rice or noodles, or as a stir-fried side dish with red bell pepper, onions, and garlic. Some individuals cook chipilin with other vegetables including amaranth, cowpeas, beans, pumpkin or squash leaves and flowers. Our seed is grown organically, is Non-GMO, and pesticide free. You will receive a packet of 10 seeds, pre-inoculated with the proper Bradyrhizobium bacteria. Chipilin seeds can take several weeks to several months to begin sprouting! You must have patience to grow chipilin! Chipilin is notoriously unpredictable and erratic when it comes to germinating. It can sometimes begin to germinate in about a month, but it will never all come up at the same time. Most of the time it will take much longer, as long as 9 months or more in some cases. The seeds require very warm/hot temps and bright light/sunshine to sprout. We have found that something that helps to trigger germination is to allow the soil that the seeds are planted in to almost completely dry out on the surface for a few days then water the seeds again. This can be repeated back and forth until you see some of the seeds starting to sprout. Also be careful not to over-water the seeds or the seedlings once they sprout as they can die due to 'damping off', a type of soil fungus. Remember that chipilin is a wild plant species and to survive in the wild it comes up sporadically to be able to survive.Please note: Chipilin germination is somewhat unpredictable and erratic, beginning in as little as 15-30 days, but usually taking several weeks or months to begin sprouting and continuing sporadically for up to 270 days (9 months) or longer - so please be patient!
